Get Some Headspace by Andy Puddicombe

I would really recommend this book as a starting point for anybody with an interest in mindfulness. He talks about the attitudes and the approach to mindfulness which i though was very thorough and spot on. Then he goes onto the practice and he has you starting off with only 10 minutes a day. He emphasises bringing mindfulness into daily life as well as formal practice sessions. He gives brief snippets of the research into mindfulness and its benefits. No heavy Buddhist stuff, i found it easy to read and i liked the style.

It also has the Headspace website to support you in the approach.
